What's even better, you get to use an affordable beef, such as silverside, as well as other yummy ingredients that round-off your weekday treat.

The secret to this recipe - be as generous as you wish with the toppings, lashing on plenty of caramelised onions and a dash of mustard sour cream! You will love that this recipe is quick and easy and will serve 4.

 

YOU WILL NEED:

 500g beef roast (silverside or brisket), boneless

 2 tbsp. Dijon mustard

3 tbsp. olive oil

3 onions, cut in half, thinly sliced

Sprig of rosemary, chopped, leaves only

3 tbsp. brown sugar

3 tbsp. balsamic vinegar

1/2 cup thick sour cream

3 tbsp. wholegrain mustard

Seasoning to taste

8 thick slices of sourdough bread., buttered

Slices of sweet and sour pickled gherkins

Bunch of rocket leaves for dressing

• salt and pepper to taste

 

 

 

 

 

 

HERE'S HOW:

 

  1. To prepare the roast beef, heat the oven to 180-degrees and place the beef roast on a sheet of foil that is placed on top of a toasting tray. Rub Dijon mustard over the entire roast and season to taste. Wrap the roast in the foil and roast for 30 minutes (per 500g).

 

  1. Prepare the caramelised onions by placing in a frying pan or wok with oil and rosemary sprigs. Cook until completely soft and translucent and then add balsamic vinegar and brown sugar. Heat and stir until the sugar melts and the onions go brown. Set aside to cool.

 

  1. Remove the roast from the oven, leaving the foil open for the meat to rest and cool. Use a sharp knife to cut slivers of roast beef.

 

  1. To serve: Place the buttered sour dough on plates and spread a thick layer of both sour cream and wholegrain mustard mix, topping this off with thin slivers of roast beef. Finish off with the caramelised onions and dress with pickles and rocket leaves to garnish.

 

Best served warm or at room temperature.
