Decadent Turkish Delight Pavlova

What is Pavlova?

For those that don't know, Pavlova is the name given to a dish made using meringue, cream and fresh fruits. It originates from Australia and is named after Anna Pavlova, a Russian ballerina and who performed and toured the area. Fans of Masterchef Australia will fondly remember how contestants referred to this dessert more commonly as "pav" and how a meringue shell or case is filled with fresh fruit and topped with chipped cream. This dish is synonymous with hot summer days

 

 

This meringue-based dessert is exceedingly easy to make and you can choose to have any filling you want. It has a crisp shell that is gooey and deliciously sweet that contrasts wonderfully with fresh, ripe seasonal fruits. This Turkish delight pavlova is courtesy of Lancewood and is filled with raspberries and topped with their double cream Turkish delight yoghurt.

 

 

Try your own personal favourite using fresh strawberries, kiwifruit, ripe mangoes or any other fruit. You can top this off with whipped fresh cream, custard or a combination of both for a delicious after-dinner treat.

 

 

 

YOU WILL NEED:

 

For the Meringue:

4 egg whites
250 ml castor sugar
15 ml corn flour
5 ml grape vinegar
Pinch of salt

 

For the Filling:

750 ml LANCEWOOD® Double Cream Turkish Delight Flavoured Yoghurt
5 Turkish delight blocks, thinly sliced
60 ml pistachios , chopped
125 ml raspberries
mint sprigs

 

 

 

 

 

 

 

 

HERE'S HOW:

 

For the Meringue:

 

  1. Preheat the oven to 180°C.
  2. Use a baking tray and line this with baking paper. Use a 20cm cake tin as a template to draw a circle on the baking paper.
  3. With an electric mixer, beat all 4 egg whites until they form soft peaks and then incorporate the castor sugar. Only mix, a tablespoon of sugar at a time and make sure to beat well before adding more sugar.
  4. Sift the cornflour into the whipped egg white and then add salt and vinegar, beating together well.
  5. Use a spatula to gently form the meringue into the circle previously drawn onto the baking paper. Mould into a nest shape and make the sides slightly higher to allow for the filling.
  6. Turn down the oven temperature to 120°C and bake for 90 minutes. Leave to cool in the oven.

 

 

 

 

 

 

For the Filling:

 

  1. Have a serving plate handy for the meringue so that you can spoon the Turkish delight yoghurt inside and top this with the slices of Turkish delight and fresh raspberries.
  2. Dress for serving by sprinkling with pistachios and a few mint sprigs.
