Make a pumpkin pie

As an readily available vegetable, pumpkin pie is is an American favourite that we should see more of here in SA. I have never tried pumpkin pie before, but have eaten pumpkin fritters... and they were delicious. With October being Halloween, make up a pumpkin pie and try it for yourself.

When cutting up and preparing your pumpkin or butternut - don't throw away the seeds. Pumkin seeds are rich in nutrients. Roast pumpkin seeds for a healthy snack alternative. You can also use the pumpkin seeds to make up a batch of tasty breakfast rusks.

Ingredients:

1 cup milk or soy milk
1 1/2 cup brown sugar
3 cups cooked pumpkin - or butternut
4 eggs
1/2 teaspoon salt  
3 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt
2 teaspoons vanilla extract

For a spiced pumpkin pie add - 1 teaspoon cinnamon, 1/2 teaspoon nutmeg.

 

 

Directions:

1. Preheat oven to 200°C.

2. Put all the ingredients into a blender and mix on medium speed until a nice soft consistency.

3. Roll out a pack of short-crust and place this in your pie dish.

4. Pour the blended mixture into the pie crusts and bake for 10 minutes. Turn down the heat to 180°C for about 25 minutes or until lightly brown on top.

Serve with fresh cream or a dollop of creamy ice cream.
