Cool down with a refreshing lemonade recipe from CHEFS!

Celebrate the warmer weather and longer days with a refreshing lemonade recipe from Jenny Ward, the Head Chef at CHEFS in Gardens, Cape Town.

Jenny’s fresh mint and ginger lemonade is simple to make and perfect to cool the entire family on a hot summer’s day. It also acts as the ideal base for that delightful cocktail at the end of a busy day.
Chef Jenny’s mint and ginger lemonade

 

 

Serves 4 - 6

8 large lemons
20g fresh mint
2 tbsp grated ginger
3 cups granulated sugar
2 L sparkling water

Slice the lemons thinly and place them in a large plastic container. Top them with fresh mint and ginger and sprinkle with sugar. With clean hands, rub and squeeze the lemon onto the sugar. Repeat this process 3 times every 15 mins. Strain the thick syrupy liquid. Pour 50ml of this mixture into a jug for every 300ml of sparkling water used.

Garnish with fresh mint, lemon slices and plenty of ice. To spice things up or for a special occasion, add 30ml of gin, vodka or Cachaça.
