Hearty and Creamy Chicken Soup

Turn a couple of fresh chicken breasts into a hearty and wholesome creamy chicken soup for the perfect winter meal.

Everyone in the family will love this hearty, wholesome, and creamy chicken soup made from fresh ingredients. It is packed with taste and filled with a variety of vegetables with spices to tickle the taste buds. It's the perfect meal for a cold winter's day. For little ones in the family who do not like foods that are too spicy, leave out the cajun spice and chilli powder for a milder but still spicy creamy chicken soup.

 

 

 

 

YOU NEED NEED:

2 chicken breasts, skin removed

1 litre(s) chicken stock

15 ml butter

45 ml olive oil

onion , half chopped

2 celery stalks, chopped

2 carrots, medium chopped

100 g mushrooms, cut in half

10 ml ground paprika

2.5 ml thyme

7.5 ml garlic powder

7.5 ml cajun spice

5 ml ground cumin

2.5 ml chilli powder

5 ml garlic powder

2.5 ml chilli flakes

2 bay leaves

80 ml milk

60 g LANCEWOOD® Mature Cheddar, grated

60 ml LANCEWOOD® Medium Fat Plain Cream Cheese

 

FOR GARNISH:

12 g fresh parsley, chopped

Seasoning to taste

 

 

HERE'S HOW:

  1. Use a paper kitchen towel to pat dry the chicken breasts.

  2. Sprinkle both sides of the chicken breast with garlic powder, paprika, thyme, and cajun spice.

  3. Place the spiced chicken breasts in a medium pot and add the olive oil and butter and cook on medium heat.

  4. Sear both sides of the chicken breasts until golden brown and then remove from the heat and set aside.

  5. In the empty pot, add butter, chopped onions, chopped celery stalks, and carrots and mix.

  6. Fry for 6 to 7 minutes until softened, adding the powdered spices: chilli powder, garlic powder and chilli flakes.

  7. Return the chicken breasts to the pot and add the chicken stock, halved mushrooms and bay leaves and simmer for 20 minutes.

  8. Removing the chicken breasts from the pot, shred this and place back into the pot.

  9. Add the dairy ingredients and heat for 5 minutes.

  10. Garnish with parsley and season to taste.
