Enjoy a Crunchy Thai Salad with Peanut Dressing

Whether you serve it as a side dish or light meal, this easy Thai-style salad offers a refreshing and tangy alternative to a traditional salad. Plus, you can  add shredded roast chicken or smoked chicken for a meaty variation for a delicious main course.

 

 

 

 

 

 

Serves 4-6 as a side dish.

YOU WILL NEED:

4 cups red cabbage, shredded finely
3 cups lettuce, shredded finely
1 red pepper, sliced finely
1 large carrot, julienned
fresh mint, finely chopped
fresh coriander, finely chopped
1/2 cup roasted salted or unsalted peanuts

To make the dressing:

80ml smooth plain peanut butter
45ml fresh lemon or lime juice
30ml honey
15ml soy sauce
30ml tepid water
1 knob fresh ginger, finely grated
1 clove garlic, finely grated
seasoning to taste

 

 

 

 

 

 

HERE'S HOW:

Combine all the ingredients in a large mixing bowl/

In a small mixing bowl mix together all the dressing ingredients using a hand whisk or stick blender to a smooth sauce. The latter method is preferable as it takes s while to mix by hand. 

Just before serving, pour half the dressing over the salad and toss. You will pour the rest of the dressing into small bowls to serve on the side.
