Reuben's Grilled Line Fish with Basil and Lemon Flavoured Sauce

Ingredients
- 2 x 200g firm white fish
- 100g unsalted butter, at room temperature
- 1 tbsp. lemon juice
- Flavoured Sauce:
- 1 tbsp. Robertsons Basil Paste
- 3 tbsp. olive oil
Instructions
- Add all the flavoured sauce ingredients into a food processor and process until smooth
- Roll the mixture into a log shape using cling wrap and chill until required
- Pan fry the fish in a little oil until cooked through
- Serve immediately with a slice or two of the chilled flavoured sauce, lemon wedges and baked chips or baby potatoes
